Caramel Corn

(my popcorn popper is on the fritz, so I’m sorry I don’t have any pictures for you!)


  • 4 1/2 cups brown sugar
  • 1 1/8 cups light Karo syrup
  • 4 1/2 sticks butter (do not substitute margarine)
  • 10 quarts popped popcorn
  • 1 1/8 tsp baking soda
  • 1/8 tsp cream of tartar
  • 1/8 tsp salt
  • 1 1/2 tsp vanilla


Mix brown sugar, butter, and syrup in heavy pan.  Bring to a boil (stirring constantly so as not to burn!).  Boil for 5 minutes.  Remove from heat and add:  baking soda, tartar, salt, and vanilla.

Place popped popcorn in large roaster and pour caramel mixture over the top, a little at a time.  Mix well.  Bake at 200-degrees for 1 hour, stirring every 15 minutes.  Spread on wax paper to cool.

Store in ziploc or airtight container.  Enjoy!

ps. this also makes a much appreciated gift – just put in a cutesie bag and tie with a bow!
